I guess even for outdoors, you'll need to set a higher ISO for the fastest shutter speed you can squeeze.

You'll also need blazing fast and accurate AF and use AI Servo, fast and long lenses or zooms, or you could use manual pre-focus and just blast away when the dogs run past a certain zone that you choose before-hand.

If you're doing more close-ups, you might have to set your exposure compensation 1/3 or 2/3 under. Try a few different settings and see what works best.

If you notice carefully, dogs often run in certain directions or they can be encouraged to run in a certain direction when at play in a large, open area. If they're just chasing each other, they will go straight for a certain distance, then turn around and go back and forth in that manner. There will, of course be variations, but generally they do that.

I've seen this so often at huge open fields and dog runs, and also a photographer who used this knowledge to shoot a pack of greyhounds (non-racing). You can't get any faster than a pack of Greyhounds on the go! He always chose his angles carefully and shot them just as they turned (when they're slowest, and also there's the least amount of perceived lateral movement).

Editing welcome :D
