You can cheat your way into P&S mode, somewhat:

CFn1.8: 2 (Enable ISO Safety Shift)
CFn1.12: Set lowest shutter speed to 1/60

Your burst buffer counter will drop like a rock, on the risk that it'd have to go to ISO 3200 where the buffer is quite short. However, it'll save your butt (by not giving you a horrendously long hard-to-handhold shutter speed) yet leave it easy to override (disable CFn1.12 and just reenable it when you're done). I've used this to hand my camera to inexperienced folks.

Nice to asee some thoughtfull responses,.
Combine all of the above good advice with CFN I 14, and you always have this feature available simply by moving your thumb 1/4" !!!
