What setting should I use on my 5D color space sRGB or Adobe RGB and why?

Thank you

It depends on the final use for the images. I upload most of my images to my website, so I shoot in sRGB because this is the proper colorspace for viewing on the internet. If you are going to end up printing the final images, the it would be better to use Adobe RGB because it has a larger color gamut.

Of course, it is a simple matter to change the color profile of individual images in Photoshop, so if you are shooting in Adobe RGB and you need to post an image here, you can have the image in the proper color space.

If you have to ask, use sRGB..

It means that until you learn about Colour Management (which is not very easy and very obvious), you should stick with sRGB.
