i just noticed my 300D takes denser shots than my 30D does? Is there a setting where I can get more dpi recorded on my 30D? it seems to be random too, some 300d shots are at 72dpi too...

The 180 dpi or 72 dpi are just numbers that are assigned by the editing software. They have no practical meaning at all.

Your 300D has 3072 X 2048 pixels, the 30D has more (forget how many).

You can totally forget the "DPI" numbers embedded in the files by the camera. They mean absolutely nothing.

Whatever software you use to make prints will determine the PPI (pixels per inch) for the print size you choose, and that's based on the number of pixels in each direction of the image you are trying to print and the size you chose. Divide the number of pixels in each direction by the size in the respective directions and you will have a true PPI number.

There is software which will increase the number of pixels in an image which can smooth out the "jaggies" if you are trying to make a truly large print.
