Remote Camera at Church

I was hired to shot a catholic wedding, no photos no flash, no moving during the ceremony, and so on. I am only allow to have a tripod with a remote camera.
Since i have to get some pics, I just got the cable to fire my camera using the pocketwizards. Only thing I need some advice is , what is the best setup regarding to aperture, ISO , speed if someone has tried this before.
At the church, I was able to get some nice test shots with no flash at 400ISO, 3.2f, and 1/80. I am thinking going probably with higher iso in order to get more DOF with smaller aperture since I am planning to focus the camera where the couple wll be located most of the time. NOt sure yet what is the best option but some advice will help a lot.

did you think about renting a mark III and wireless transmitter so you could see (via live view) and fire remotely?

The 40D also has live view (good point here), and I have no problem to fire remotely, only thing is I want to get sharp pics.

a smaller aperature will give you a bigger dof but you may have to increase you iso

According to this Lens Calculator (external link), I woul try to locate the camera far from the subject in order to get a better DOF. I am planing to use my 70-200 with an aperture smaller than F5.6.

Sounds like it should work. I'd suggest ISO 1600 - the 40D (I don't have one) seems to be quite good at higher ISOs and it's much better to have slight noise than annoying motion blur or OOF...
