Well here is another shot from my weekends escape for the past 2 months without much satisfaction as the bikes were too fast for me or I was too slow in choosing that moment with 3 fps on my 5D.

Tried this out the weekend when I took the 1D on my first trial run and hey presto, panning with 10fps is made easy even on approaching angles as in this shot where I stood at an angle where the subject approaches at about 10 to 11 o'clock with AI servo on with speed at 1/80 (will try 1/30 the next time).

You are right. The speed was 1/80. Have corrected the text in the original text. Should have referred to the exif.

Depends on what you're shooting, but I would assume 99% of the time AI-Servo.

HAveing never tried it i didnt knowi if it was a case of focusing once and waiting for the shot to be in focus sometime in the next secind or so, or whether the camera has enough time to adjust focus between every shot.

Well, yes, that's what AI-Servo is supposed to do. If you are on one-shot, the focus would stay fixed no matter how many shots it took.

Yep, I agree. Odds are if you have a reason to shoot something at that frame rate, it's probably because it's moving pretty quickly, so AI-Servo would be the mode to use.
