Try the Tv mode on the creative zones. Set the ISO to whatever you need and the shutter is what the number represents otherwise on the LCD.

Why multiple threads on the same subject? Do what Suzy said, or set your camera to M mode and set both shutter speed and aperture directly (keeping in mind the correct exposure). And as Randy implied, read your manual. It's very well explained there.

In Tv or M move, turn the little wheel.

I did not realize it would be that big of a deal.

I figured there would be a simple way in manual to adjust this setting manually so that I can see all the possibilities.

Download the manual and read the whole thing. Will save you the "reinventing the wheel" problem. :) Good luck! If you got a good one, you are very lucky.

Does this mean that Canon is not capable of manfacturing a good camera consistently?....and some are good while others are not?

Sadly, yes. That doesn't mean that Canon is any worse than other manufacturers though, also sadly.

I think the real point though was that as a second-hand camera, you cannot be sure what its history has been.

That is correct. Like second hand cars or anything. Hope the original owner was good to it.
