Is there a way to force the default crop size to, say, 8.5x11 in LR?

Always wants to lock on the aspect ratio of the original.

Yes, I know that. I want to set it so it defaults to 8.5x11 (or some other size). Otherwise every time I crop, I have to make that selection. That is the tiresome part.

No, but there's a workaround.

Select all of the applicable images in Grid mode before you start. Select the 8.5x11 crop ratio from the dropdown in Quick Develop. All of those images are now set to 8.5x11 ready for you to tweak.

Ah. Good and sneaky work around. Thanks for that.

I'm really surprised that Adobe didn't allow you to set this as some sort of preset.
