I don't know if it is possible in Photoshop, I used to process several files in one operation in Watermark Master. Very handy and simple.

Another non-photoshop batch method is $30 - called DCE Photo Enhance

Pick a file, files or folder - put in the text you want - with some pre-formatted stuff like date/time if you want it, specify the color and font and press GO.

I've been working on a combined resizing/watermarking action for a bit now, and finally have something I'm happy with to resize things for the web. The most common problem is making sure that your watermark is consistently sized for your photos. The way I overcame this is that ALL photos are resized to a width of 500 pixels (instead of just constraining BOTH the width or height to 500 pix) and then sharpened for the web. Then I create the watermark, which in my case is centred on the image - yours can be aligned to the sides/top/bottom etc. Finally I do a second height resize to 500 pixels, which means the image is never larger than 500 pixels in either dimension - this second resize has a very minimal effect on loss of sharpness.

Now all of my photos can be batch processed at once for resizing/sharpening/wa​termarking, regardless of their size or orientation (portrait/landscape).
