I need some ideas of bag. What I want is something that can hold all my stuff but is also functional. A backpack will work but the functionality of it can be a pain, taking if off so you can get into can get old. I will use it mostly at the race track, and out hiking/birding. I will most likely be toting a 1D, 30D gripped, 100-400, 120-300, 28-75, 18-55, (maybe others in the future. Also all the extras that go along with that stuff.

I have really been considering the TT 360 with some extra holders for the long lenes etc... but I was wondering what some of you might recomend. Currently I have a backpack and a Nat Geo shoulder bag (I like this for general stuff). You don't even need to recommend an exact bag, a general catagory of bag would be welcome also.

You want to work out of it at the track, and presumably moving around, you need shoulder bag. For that gear list, maybe a Domke F-1x or F-7 Double AF are worth looking at. The F-7 has a belt, which can help distribute the load off your shoulder.
