Actually, and just for info., it looks like the 1D mark III can do just that. I haven't actually tried it but "you can take up to eight spot meter readings for one picture" (page 91 of the instruction manual). it will use the average of the spot meter readings taken.

RAW vs Jpeg. The endless debate. Shoot in the format that suits you best. I shot in Jpeg for at least a couple of years before swithcing to RAW. Now I shoot everything in RAW. Its a personal thing but I notice a difference. Just stay away form sRAW if your camera has it.
