I dont have a ton of room but I got a couple of backgrounds I want to play with. How far minimum should the model be from the background and how far from the model should I be with the camera? I know it all depends but I know there has to be a rule of thimb I just cant find it anywhere.

Nope. Background distance depends on where the light is coming from & keeping that light on or off the background. Your choice.
Lens distance depends on it's focal length & how much you want to include in the shot.
Experiment. Have fun. Learn something along the way. ;)
