Interesting history. I looked up the breed in Wiki. The pictures they have don't show them holding their tails up like she is in the video. Does she just do that when she is excited?
It is more up when she is excited and playing. She holds it down a bit more when she's relaxed.
Originally the breed was used for hog hunting in Australia. They have retractable claws, and can climb trees.
We have always called Ginger our 'tree climbing pig dog'. 
You can do a search on youtube and see quite a few Catahoulas. Some carry their tails high, some low.
Ginger is a rare 'solid color' with her only spots being on her chest and feet. And she's got the gold eyes instead of the cracked glass eyes too.
