Portrait Advice needed

I want to do a portrait after the style of Ansel Adams one of Georgia O'keefe and Orville Cox (below). I've akways loved this image, I've always thought it looks as if she's just told him a fine if slightly naughty joke.

I know a couple who would be perfect for it - they are both committed environmentalists and the man has that 'dreamer's' look that I see in Orville Cox in Adams' photo. They are younger (early 30s, and I see that to the good as it separates it somewhat from Adams' portrait. I've been mulling this idea over for a while and would like to do it in to enter it for the annual Olive Cotton Portrait prize.

I don't want to reproduce it, just 'tip my hat' to it as an inspiration. But I definitely want the two to be wearing similar hats (not necessarily similar to the picture, but alike in my photo).

I'd like also to somehow inject a bit of an environmental theme into it, to show what theyare passionate about, it would be a real bonus.

Can anyone give me suggestions on the best way to shoot what will be an outdoor protrait like this? I've never done one before, and it may not work out, I may not be capable of achieving what I want. I get along well with the couple, though, and think it will work. Any advice gratefully received.
