So the 1D3 automatically selects the best focus point out of all 45 points in Servo? Doesn't the 7D do this as well?

It ALWAYS starts tracking with the center point, thus it's up to you to put the center point on your subject to begin tracking. After that bit of business the camera will them hand off the AF servo responsibility to other points IF the subject you started tracking moves from under the center point.

Oh I think I got what you are saying. So if I wanted to track the head of the subject, I should focus the center point on the head of the subject first (initially) then locking that focus will lock the focus on the subject's head. When or if the subject moves, the focusing points will also move around the 45 AF points following the subject's head and I do not have to keep the subject's head at the center focus point.

Is that what happens?

Correct, but if you need to do significant re-framing I'd suggest manual point selection so there is less room for tracking error.
