Not to roast you or anything but ya gotta learn some how.

1.) Composition: Granted I'm not the best when it comes to this, in these type shots get as low as possible if you're up close to the bikers. Also, I'd invest in a nifty fifty, if at all the 50mm 1.4. Both are great lenses and it will detract you from the kit lens.

2.) Camera settings: ISO 800 with a shutter speed of 1/60. If you're wanting to catch this action then you're gonna need more than 1/60 for a camera shutter speed unless you have external flashes lighting your source. I'd say you need atleast a 1/125 shutter speed but more than likely you should be fine at your camera's flash sync speed which should be 1/200. This is why the images aren't in focus or are crisp. Also a big thing, if you don't have an external flash setup then your best bet would be to used the widest aperture that your lens is capable of.

3. Lighting: Especially if you are going to be shooting a lot of this kind of stuff then you will need to get an off camera flash set up for yourself and learn how to work it and set it up on the scene.
