I want to pickup a couple more batteries for the 40d's grip. What would be a good charger to get so I can charge more than one battery at a time? Or should I just get another CG-580 canon charger?

There is a Duo version of it that can charge two batteries at once. It's not a particularly cost-effective way of doing it as you [presumably] have to get a second canon battery plate, but it would give you a fair amount of flexibility for charging all sorts of battery types...
