Anyone know if the CP-E3 will work with 580EX II's?

yup - 1000% sure...as i have both...E3 and E4...the weather sealing is the only difference..

People have been saying the manual says don't use the E3 on the 580EX II, but probably just Canon trying to make me buy a new one.

Regarding the external power pack, the only thing that's in the manual is the following:

For the external power pack, use (3) above. If a non-Canon, external power pack is used, it may cause malfunction.

the (3) in the quote is referring to the CP-E4. I couldn't find anywhere where the manual specifically says not to use the 580EX II with the CP-E3, though. And not saying that a flash will work with a certain power pack means something completely different from saying specifically that a flash will not work with a certain external power pack.
