They start on land, get about a 10' running start down a dirt ramp, kind of like a boat launch and then and go on to the water. They do 4 oval laps for qualifying runs and the top 2 advance to the longer final round. http://www.darkvibe.org/gallery/

It can be done with quads as well, but they need to go straight and need to maintain a higher speed. I've even seen it done with a Jeep with really wide tires going really fast. Awesome shots.
