Will it help me to be more stable on verticle headshots using my 70-200 f2.8. I shot a bunch of photos of people today, working with them in an event situation but shooting as we talked, looking later I realized I'd shot over 2/3's of them at 200mm and often had to back up a little to get in focus. I really like that look and might try it next time with a 12mm extension tube to get a bit closer and drop off the background even more.

I also did something I hadn't before, that was put it on a kind of high ISO, 640 on my 5D and set it on priority, most of the shots were at f8 and even then a few of the shots where the person may have tilted their head back while laughing or moving around, the depth of field didn't carry but all of the shots had decent out of focus backgrounds, yes there are a few that would have benefitted being even softer but I'm very happy.

What would I do next time, probably try the extension tube and for about the fifth time consider a battery grip, I keep looking at other lenses for this type of work which I love , mainly the 85 f1.2 and now the 135 f2 and honestly I'm considering the 70-300 for outside work, the stuff you people are showing me in another thread is very impressive and the weight and size of the lens would be very stable so it's in the consideration stage as well.

But do you like the battery grip on the 5D, I really don't need the extra battery, that's a non-issue for me.

Yes, a grip will help with stability. So would an IS lens :p

By "and set it on priority" what mode do you mean? Also ISO640 isn't high for a 5D, 800 looks great, 1600 is easily usable for prints up to probably 15", and ISO3200 looks great if the other option is motion blur. I often have my 2nd shooter for weddings use a 5D, 50 F1.4, and ISO3200 for the first dance, the images are printed whatever size I want them, up to 14" wide in an album and they look great so long as they're correctly exposed. Even slightly underexposed turns out ok after they're brightened up.

I bought the 5D grip only after getting a 70-200 f/2.8 L IS. I found my pinkie wanting for a surface to grasp onto. Now I am shooting more verticals just because it is easier to do so.
The grip is a bit boxy, but that is how they designed it, so I accept the way it is. I am getting, with proper technique, sturdy handheld IS shots with this combination.

Such as this shot, wide open, 200mm handheld:

and here is the crop of the razor thin depth of field and apparent sharpness:
