What would you recommend using in a sync cord setup with 2-3 flashes?? in terms of splitters, adaptors, no. of flashes, etc.
Would it help if you didn't have to use hotshoe to PC adaptors? (like using Nikon flashes which have a PC terminal already)
At the moment i'm using just a sync cord and 580exII, but would like to add another flash like a SB-28 or something.. or sell the 580 and buy 3

But your 40D, your 580EX II, and the Nikon SB units you cite can accommodate the Screwlock PC connector (in addition to the standard male PC connector).
The Screwlock PC connector does not have the reliability issues of the standard PC connector. But, it does take a bit more time to screw the locking collar in place.
In general, for multi flash corded setups, I would recommend leaning on the mono miniphone plug gear for splitters, extensions, etc. And using short adapters with the needed connector at the flash.
The mono miniphone gear is inexpensive, compact, reasonably available, easy to set up, and very reliable.
