Advice on Spot Metering with 30D

I haven't used the spot metering mode much, but will need to when shooting in Arizona next month - especially when using a Grad ND filter. So my question: Let's say I am focusing using the lower dot in the matrix of focusing locations. (IE, I want foreground in focus, but lots of sky) - Does the spot metering still operate off of the small circle in the middle of the viewfinder, or does it adjust as one selects the focus point? If it stays in center (my guess), then do I need to point at area where I will later focus, remember f-stop and shutter speed, then bias my exposure once I have set up for the shot?

It stays glued to the centre circle regardless of focus point selected.

As long as you bear in mind that whatever mode its in, the meter wants everything it sees to be a mid grey. So you will need to make the neccesary alterations to its "suggestion". If you do this, then there is no need to point it at where you will eventually focus.
