What's the best book for basics on using Elements?

Well, it was looking like rain so i though against it. I was hoping for a really cool sunset due to the clouds coming in, but it did not happen as good as I thought.

You have a good goal of getting it right in camera first, but if you do get a shot that you like that was underexposed do as gbpro1 said and hold on to it. As your PP skills catch up with photography, you can go back and bring your images back to what you envisioned.

Here is another sample of recovering that underexposed shot.

I have a question for you, first, what program did you do that editing in? Second what do y'all think is the best (and easiest) editing software for photos (Lightroom, CS3, something better)?

I used Photoshop.

I use both Photoshop and Lightroom.

I would suggest getting familiar with Lightroom, and then very shortly after dive into Photoshop. It's a steep learning curve, but keep at it. Read, practice, read, practice more.
