you can shoot Av or M for bike racing. I tend to prefer M since I don't run the risk of getting a really slow shutter speed due to a goofy meter reading off a dark jersey or anything. Use AI Servo for sure and ctr pt. focus only to help insure consistently getting good focus. I also like to use back button * focusing to separate it from my exposure. I usually meter partial to again avoid picking up something really off off a jersey or something. With cycling, I have used slower shutter speeds than I might with other sports since you want to convey some motion rather than freeze action. To keep your subject tack sharp, you'll need to pan with them keeping that ctr pt right on your subject. Since you'll be panning (and therefore hopefully getting some blurred background from the pan) you can stop down a bit more which will deliver good IQ and allow you to control your exposure better. Another option is to use some flash which can work well albeit tending to stop action a bit too much if you aren't careful.
