IS there anyway to diffuse my ext flash DIY??

I was wondering if there was anything i could do myself to diffuse my ext flash? like put any kind of material over it myself or anything? I am shooting pictures tonight of a girl and her horse at the fair and it will be about 7-8:30 pm and it will be getting somewhat dark...also...what is the best way to use my flash to help with my pics? since there is nothing to bounce flash off of...what would i do? thats why i was wondering about the whole diffuse thing. I have a lot to learn about ext flash. Thank you in advance

One quick way I could think of is to use a white foamcore board, bounce the flash off it. Pick a interesting background, set the camera to iso400, f4-5.6, Tv 1/30-1/60, so some BG details will be recorded.
