Despite vivid colors in photoshop, they look flat...

Are you saying they look flat when converted to JPEG? If so, that could be a problem with the color profiles or something.

Are you converting to sRGB before saving as .jpg?

If you converted or preserved the sRGB color profile, you will also need to view the images online with a web browser that respects/supports embedded color profile info.

The polar bear shots were in a tough setting, with part shade and part sun. You might try cropping a little tighter and catching the animal in one or the other.

I once did an all-day shoot in the woods while I had my in-camera profile set to sRGB. When I viewed my efforts from within CS3, my color definitions and saturations were so sharp I could almost taste them. After post processing in CS3, I loaded them all into a 3rd party viewer in order to batch process them to jpg and a specific size. I learned the hard way that my 3rd-party viewer did not support sRGB. Once the 3rd-party viewer processed them the color luster was completely destroyed.
