What would you guys suggest for low-light photography with minimal grain? Just get the ISO down as far as possible what's practical with my aperture & shutter for the conditions in the shot?

Hmm..with a closer look, I'm seeing some grain there. But I only noticed because I made a point to look for it. No EXIF on that one.

First off -- glad you liked the shot.
ISO here was at 1600, but I also emphasized the grain in post...I actually liked the effect. 
Here's the shot slightly larger. Running a good noise reduction filter (Noise Ninja is incredible, btw) would reduce the noise to almost imperceptible levels. I'll have to go back and look at the original to see how the noise is, but it's been my experience that you will see noise at ISOs 1600 and 3200. Typically, however, it can be substantially reduced in post. I think the important part is simply correctly exposing the shot at capture -- bumping up exposure on a high ISO shot WILL create noise...especially in the shadows.
