Ryan, are you teaching a class with film cameras or digital?

Understanding Exposure by Bryan Peterson is always a popular choice, and for good reason. If it is digital he has a book for digital as well.

New Manual of Photography
Author:Hedgecoe
ISBN:0789496372

This is a very well laid out book and covers everything from lenses, to lighting, to composition.

Hope this helps.

I have to second Bryan Petersons book. It works for either film or digital and does a great job covering the basics.

Not sure why, but call me JJ.

What's up man? :D

Peterson's digital book isn't bad, but it doesn't touch too much on workflow. It dabbles in PP, but that is all. If you want to come by and scope it out, let me know.

Is this an after school class or in school? Where is the class?

7 weeks, 5 hours per day...how many days per week? It sounds more like brainwashing attempt, than an education! ;)

What kind of price per copy are you looking to stay within?

I second this - very good book for beginners, explains things in a way that makes it easy to understand.
