A dutch oven full, but; Curt loves left overs so no problem here to make more than enough.:D

Oh and simmer with the lid off, helps it to thicken.

I don't think I could eat that much.... ever... left overs or not! :shock: The boys won't eat it!

Ah I see, and your lucky you got an erly start because the more I watch the news the more it looks like your not going to be able to leave your house being afraid of getting shot and so on, But I can't sit here and worry I have a goal :)

I had to sigh when you took Jinx to the Outback, that is an area where Europe has it well above us. When I was in Austria, dogs were everywhere with their human packs. We need to learn that lesson here, IMKIAO.

You don't know what you are missing...and there is no relationship between pastrami and salami....good pastrami is right up there in taste with prime rib.

Never had pastrami.... but baaaaaaaad experience with salami... won't eat the stuff... But I don't eat much of that kind of meat... liek sandwhich meat.... ham/turkey sure... but other than that no thanks.

Yes I did get an early start... I'm too freakin out of shape for that now.... Hiking parts of the Appalachian Trail, and through parts of the Linville Gorge when you are 16-20 and 25 lbs lighter.... is MUCH different than hiking those same places when you are almost 20 years older... and 25 lbs heavier... ;)

OK, Curt is awake and Chilli is ready...out for a bit. And I'm sure glad I don't have acid reflux or the like, eating chilli this late. :rolleyes: ;)

I made chili Monday.
11/2 pounds COARSE ground 15% fat beef
1 can tomato sauce
2 cans whole tomato
1 can kidney beans
1 good size sweet onion
2 tbs rough cut fresh oregano(estimate)
2 or three chopped cloves garlic
1 tbs cumin
3 tbs chili powder
Brown sugar to taste(optional)
Salt to taste

Brown meat in a 4-5 quart Dutch oven if you have one. Add garlic and onion and cook until onion is soft and transparent. Add everything else and cook an hour. You can cook it longer which makes for a rich taste just cover it if it starts to get too thick. I used a chipolte chili powder on a whim. It was good and added a lot of smokey flavor. That said it was a bit too smokey. I think I had a taste for really traditional chili taste and the bit of smoke threw me off. It is a nice twist if you are trying to have your dish stand out as different but I might try like a tbs. chipolte and the rest traditional chili powder. Anyone know the difference between chili powder and Mexican chili powder? That might be good to try. I also considered a little sherry but was not willing to trash the whole dish on an experiment.

I would like to get back in shape.... I am finally feeling well enough to do short day hikes with the boys.... I just won a camping basket at the boys school carnival... and they'll be getting some things for birthday/Christmas.... so we'll be set for camping next spring! And don't even think I'm going to consider camping in the winter.... I'm too cold natured!!!!!
