5 Minute Chocolate Cake in a Cup
1 Large coffee mug
4 tablespoons cake flour (not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk or Kahlua
3 tablespoons oil
3 tablespoons chocolate chips
dash of vanilla extract
pinch of salt

Add dry ingredients to mug, mix thoroughly.
Add wet ingredients and mix thoroughly.
Stir in chocolate chips.

Microwave on high power for 3 minutes. Cake will rise above edge of mug, but will go back down.
Allow to cool slightly, turn out on plate, dust with powdered sugar.

There ya go!

I switched to my Hootie and the Blowfish channel. Roll to Me by Del Amitri came up. Love the song, never knew the name of the band. Pandora rocks! :D

I made chili Monday.
11/2 pounds COARSE ground 15% fat beef
1 can tomato sauce
2 cans whole tomato
1 can kidney beans
1 good size sweet onion
2 tbs rough cut fresh oregano(estimate)
2 or three chopped cloves garlic
1 tbs cumin
3 tbs chili powder
Brown sugar to taste(optional)
Salt to taste

Brown meat in a 4-5 quart Dutch oven if you have one. Add garlic and onion and cook until onion is soft and transparent. Add everything else and cook an hour. You can cook it longer which makes for a rich taste just cover it if it starts to get too thick. I used a chipolte chili powder on a whim. It was good and added a lot of smokey flavor. That said it was a bit too smokey. I think I had a taste for really traditional chili taste and the bit of smoke threw me off. It is a nice twist if you are trying to have your dish stand out as different but I might try like a tbs. chipolte and the rest traditional chili powder. Anyone know the difference between chili powder and Mexican chili powder? That might be good to try. I also considered a little sherry but was not willing to trash the whole dish on an experiment.
