I have the money, and i'm a pro, but i've used Sterlingtek batteries for years. Of the 25 or so batteries i've purchased for myself and friends only one was a dud. Check out the thread I linked to for more battery info.

well, no name brand 3rd party batteries isn't necessarily safe. These types of batteries are primarily the reason ipods, cell phones, laptops, etc, explode or caught fire. Do you really want to put a $10 battery on your valuable camera equipment? I'm not saying all of them are bad, but avoid the cheapo on ebay from chinese sellers!

I wouldn't depend on 3rd party batteries also. You never know when they'll discharge on you. Sometimes you could go days on it on a full charge, other times it wouldn't go past a few hours.

Um . . . there was a recall over batteries Sony made for the laptop manufacturers which were overheating, with predictable results.

SterlingTEK's have a good reputation here and elsewhere, which is why I got a two pack of them for my XTi.

My 1D Mark II handles cold very well, I haven't got experience with that with the XTi as this will be my first winter with it. Even good batteries will not last long in the cold, but if you warm them back up they'll usually work again (they've not been drained, the have just gotten so cold that the chemical reaction inside that provides power has been slowed down).

Carry a spare or two in your jacket (to keep them warm) as others have mentioned and swap them out whenever the battery in your camera seems to be dying. You'll probably be fine to put that battery back in later once it has warmed up.
