Jennifer, I'm guessing your batteries were not fully charged. In the dark one, the flash either didn't fire or was really low-powered. Just my guess.

It has that look of being in mid-cycle.

Well... I did sit funny long enough that my feet fell asleep... I should NOT sit like that....

The only difference in the two is the direction the flash was pointed.... this is fresh batteries, and those were my first two shots of the afternoon :(

It was my first shot... it was all ready and new batteries... :( Not to mention I made it through over 100 shots and the only shots that look that way are the ones where I was either too far away, or the flash was not pointed directly at Santa....

Jen, I read your EXIF data and here is my suggestion...

You were at ISO1600, f/7.1 and 1/160th of a second...

1/160 is good, no issues there
f/7.1 ... good amount of DOF, might not be needed - maybe f/5.6 would have been fine
ISO1600 ... NOPE. I bet you could have dropped that to ISO200 or ISO400 and gotten better looking photos.
When you are in manual mode with a Canon flash (and Sigma's E-TTL flash) the flash will produce the power needed to get as close to the proper exposure. Of course there are limits - you can't be at 1/250 @ f/22 ISO100 and expect a 430EX to light the subject.

When you are at ISO1600 - the flash isn't doing that much work... you are mainly seeing ambient light there... grainy ambient light.

But at 1/160 @ f/5.6 @ ISO200-400 I would expect the flash to work just fine.... try that on some subjects around the house...

And I have to agree with Scott....no ISO 1600...200-400 should be ample...

I had it on ISO 1600 I suppose because my mind set was that I'm inside... and shutter speeds... but since I was setting that... I shouldn't have needed ISO1600... duh... but I suppose I was a bit distracted... I don't shoot well with minimal distractions... throw in 30 3 & 4 year olds... I'm so not going to think straight! :( Noted to self... not that I'll remember!

So here's a question.... what should I have my flash set on? I have 3 or 4 choices....

I've never used a Sigma flash like that - what are your 3 or 4 choices?
