Cutting out text in CS2 or CS3

I am looking to place a plain coloured layer (lets say white) over the top of, and completely covering, a photo.

Then onto this layer I want to place some chunky text, cutting out the text (maybe with a bevelled edge?) so that the photo shows through where the text would have been.

I know this must be really simple, so simple that I just can't seem to do it! :confused:

Any help would be appreciated.
