Foodguy and Lupo-Lobo, thank you both very much. When comments come from people whose food images are as good as yours, I take them unsalted.

I'm troubled by the difficulties with white balance--the unevenness of blue and yellow casts on the white surfaces. When choosing whitish cabinetry and other surfaces, I had high reflectance in mind, for shooting small still lifes. It now seems that I should also wear a white coat, hat, and gloves.

Try experimenting with pulling down the blue saturation slider in post since with this image there is not any actual blue content. When ever I use window light I pick up some blues that reveal themselves in the whites ... negative blue saturation usually takes care of it. Sorry for the late reply!
