I'm looking into getting a speedlight setup, but I'm not really sure what I need. Can I get a similar output from a single speedlight as would from a studio flash? Or am I going to need to buy multiple speedlights in order to get the kind of light output I need? Could someone with experience here please give me some advice.

Not even close. Hotshoe flash units and studio strobes really are different tools for different purposes.

However, one or two flash units can sometimes be used to create quasi "studio" type lighting, in some situations.

You need to tell us more about what you want to do.
