There are actually a lot of leaf shuttered removable lenses, especially in medium format and up (take the Leica S2 for example, it has both). You could easily adapt a leaf shuttered lens to the EF mount and then trip the shutter via the PC sync port (not sure if they can do this standard or if it'd require some DIY work, but it could be done), however you'd have to control the shutter speed manually on the lens.
