I've got an XT with the 18-55 non IS kit lens and a Tamron 70-300 Di LD Macro. I bought the Tamron b/c I wanted some more reach and was very short on $$ at the time and it was cheap. I've come to find out that I really need IS for those longer shots. 250mm is plenty long for what I shoot and 18mm is plenty wide enough. 99% of the pictures I take are outdoors, so light is never really a problem.

Option #1: Sell the Tamron and replace it with the Canon 55-250 IS (cheaper option)

Option #2: Sell both lenses and replace them with the Tamron 18-270 VC (more expensive)

I really like the idea of carrying around 1 lens and not having to change lenses. I'm a total noob at this and it's all for fun, nothing serious. If you had the $$, what would you do?

Agreed - best value-for-money combo.

The Canon combo will deliver slightly better imaging quality at the expense of total convenience in the superzoom. It's a matter of what's more important to you. From your comments though, I'd say get a superzoom with stabilization. I've used all the combinations you could think of, and especially while traveling or walking around, those stabilized superzooms work out real nice. The 18-270 VC is a fine one too.
