Yep, its an option in the menus to have the histogram display either brightness or RGB.

I know what you mean - I loved everything about my 1D except its IQ. I have some cool shoots coming up and I think the MKIIN + 17-40L will be really nice, the zoom is a bit too wide on my 5D for studio work, but it should be perfect on the 1.3x.
