Outdoor Portraits and the Digital Rebel

I have a 420EX and an EOS Digital Rebel (along with numerous studio lights). I've been having a great time with studio portraits for a couple years now and would like to expand to outdoor portraits. For those of you out there who successfully do outdoor portraits, do you rely on your in-camera meter when you're using a flash as a fill-flash?

I plan on using AV mode so the camera will automatically default to fill-flash mode. I also plan on diffusing my 420EX with a small soft box.
