One is fine, remember you have the sun as light also, so you'll often already have two light sources if only one flash. Unless you're shooting at night. Many of the shots on here are used with only one light.

One umbrella + sun as hair light.

Taken with 50mm, 1.4 @ F4, 1/250, ISO 100, and 580EX II at 1/4power if I remember correctly.

i'd definitely start with one flash and once you learn and master being able to balance the amount of light and the way it affects your subject with the ambient light (light thats already there, eg the sun) only then start using more than one light..

i often still use only one light for shoots because it makes things so easy and its really easy to get great results..

the sun is a huge strobe just waiting to be used, so use it for your advantage and try and shoot with it behind or to the left or right of the subject to give the photo a 3D look, like this shot (which was taken at the middle of the day, which gives that band of light across the top of his head)

another flash was based to the left of the subject and then another at camera right to give the fill..

the second shot is one light balanced with the light that was already in the room so the flash wasnt overpowering, but gave a very natural look, i believe the power was at 1/64 on a nikon sb-26

And do you just manually set your flash so that it doesn't try and overpower your subject? How did you aim your flash in the second shot?

Oh, and thanks for the info. I am shooting a family friend this week outside and I want to try and get some nice shots.

yep!
i wouldnt bother with ettl for off camera..
get used to manual flash and play around with it before your shoots :)

the flash in the second shot was at camera right and on a low power setting to give a soft, natural light :)

Thanks Phamster. She is awesome. New to modeling so she was a little nervous and giggly but I think she will go far. I do believe the flash was bare at that point.

This is a nice shot overall and here are some suggestions for making it even better.

Background-Try picking a background that doesn't have so much going on as this one is a little distracting.

Aperture-A wider aperture will give you more blur to the background making it even less distracting.

Shutter speed-Try shooting with a higher shutter speed to underexpose the background by at least two stops. This will make your subject "Pop" more. You might need to use High Speed Sync if your camera/flash supports this.

Flash-I think the flash intensity should be brighter. I can hardly see the effect.

Your watermark-Ay Caramba!

Keep up the good work and be sure to show us your next attempt.

Hello Gang. Here is an image I used from a video I put together on outside location lighting. The shot was taken around noon but I'm standing in the shade to avoid the harsh light of the 12 o'clock sun. Only one flash was used, bare bulb.
