In Canon's White Paper, they say they give the user full manual control in video mode. I have it highlighted in the pdf. Is that a mis-statement, or am I missing something?

The only thing we can control is exposure based on the camera's meter reading. We cannot control ISO, aperture, or any other function, or again, am I missing something?

Any thoughts, comments, solutions, work-around, class-actions welcome

This video does not accurately state the manual control of the camera, for the control he is doing is in live view but any adjustments as soon as the record button is hit will adjust to the automatic video control.

In any case, the point I was trying to make is that it kinda sucks that there is no full manual control as canon has it stated in their white paper.

Can you post the highlighted section here, or refer to a page number and paragraph?
