How do you do a double exposure?

I own a 5D classic and was wondering if anyone can explain how to do a double exposure.

Dark room.

Pose the subject and flash, set the camera to a very long shutter speed (30 seconds, or bulb mode or what ever).

Open the shutter and fire the flash, thenwith the shutter still open, re-pose the subject and flash as needed without moving the camera and hit the test button to fire the flash a second time.
