I think the first is overexposed but if you adjust it and give more sharp is ok.

And a tremendous amount of jaggies over the entire airframe. The 75 shot is a on the soft side originally and no amount of sharpening will correct that and still look natural. We all get soft images occasionally, and the trick is seeing immediately it's too soft and just ditching it and moving on. The image has to be right in the first place, and sometimes there's just no point in trying to correct a flawed shot unless it's a very special movement. Jet2 757's taking off from Manchester arn't rare, so it will be very easy for you to get it again and nail it (assuming you're local to EGCC).

The Swiss shot is good. It's sitting pretty much perfectly in the middle of the frame and the exposure's good. There are just two things I'd do with the edit you posted and they're to sharpen more (using USM in Photoshop at 80% and a radius of 0.3) and very slightly adjust the levels to give it a slight increase in contrast. In the original you posted the tyres look slightly grey instead of black, but nudging the darks up a little (from 0 to around 5 or 6) and shifting the mid tones up by about the same amount will make it slightly more dynamic.

Just a quick note as well... The Jet2 75 shot has a distinct lean to the left, so be sure to keep an eye on buildings in the background when shooting from the south of 05R/23L. It's awkward to level when you're shooting 23L departures and looking down the runway because all the references you can use to level the shot seem to contradict each other, but the ultimate reference is the buildings in the background. Even if the runway is at a wacky angle, if the buildings are parallel with the edge of the frame then the shot is level. :)
