Just a quick confirmation question if you don't mind:

The metering modes built into the body (spot, partial etc..) affect only the in-camera display when you are looking through it to compose the shot, and you adjust from there if desired or required.

But if shooting Av and TV, the metering modes affect the output of the photo aside from any exposure compensation you make from the initial meter reading?

The metering mode affects the exposure registered by the camera, regardless of whether you're shooting in manual mode or Av/Tv. The difference is in the way you adjust the exposure based on the result given by the particular metering mode you happen to be using. Assuming a constant ISO, with manual shooting mode you adjust either the shutter speed or aperture, or both, to get the exposure you want; with Av or Tv you adjust only the aperture or shutter speed, respectively, and the camera uses the metering information to adjust the other variable. There's no inherent relationship between the metering mode and the shooting mode.

Another way of saying it is that the metering mode affects the "output of the photo" regardless of the shooting mode, except that in manual shooting mode, if you make absolutely no adjustment based on the metered exposure, then the metering mode would not directly affect the output, it would just give you an idea of how far off of proper exposure that output will be.

Another way to think about it is, whatever mode you use, the whole frame will be exposed the same, Spot metering will not show a brighter spot in the middle, Center Weighted Averaging will affect the whole frame. It may come out brighter or darker than another mode might produce, but the frame is exposed evenly.
