I just moved up from p&s to the XSi and I'm trying to find out about all the functionality. I've been with Canon for a long time and love the Color Accent feature in the Powershot. Is there some thing similar, or better, in the XSi? I haven't found anything yet.

I don't believe there is anything similar in Canon DSLRs, but you can easily achieve the effect with post processing software.

With a DSLR many people shoot in RAW and process every image. What you get out of the camera (in RAW) is not really a final product...it's a two stage (at least) process.

Another real quick and drastic preset type setting comes in the form of Adobe Lightroom's Presets. People usually make their own and can be extremely useful and powerful.

You can download a trial, and just google in presets on and there will be lots of free downloads on sites....it's also a stellar program for editing if you don't want to get real deep with photoshop.
