Yeah, I have a thermometer. I'm trying to get the hang of the whole steam thing, but I'm not getting microfoam.

I tried it with a smaller (pottery) milk jug earlier and it was lots better. I'll have to wait for my proper steel 12oz jug to come through.

You have so filled me with jealousy right now!

oh I wasn't trying to. You posted shots of your coffee the other day and I thought it was a REALLY cool idea so I wanted to try it. :o

Definitely a smaller jug will help you.

Pete where did you order your stainless steel pitcher? I need to get one and can't find one in any stores. I do have a pewter pitcher I can use.

oh my gosh it's SO YUMMY. I've been making Americanos but they do have a tendency to overpull the shots. This was so perfect.

I ordered mine from an online store here in the UK. It looks like Lisa is using one from Starbucks, so head to a store, I guess!!

I've heard of overpulling. What is it?

Ideally, your shot is only supposed to run for approx 21 sec. Any longer than that and the bad characteristics of the ground coffee are leached out of it as well and put in your cup. 21 sec. is supposed to get all the flavor and none of the bitterness. (at least I believe it's 21 sec)

Hmm... But doesn't all this depend on the grade of ground, the kind of coffee, and how hard you've tamped the portafilter down?

There's so many variables!! It's just too much like photography! :D

Not in a couple where I've looked. I'll try out the local one since I've yet to go there.

True...it is taking into context that you tamp it properly and use the "proper" size grounds. LOL

Really it also has to do with how much water your machine pushes out...how quickly. So I think you could say the 21 sec is a "guideline"

My machine does it all itself so I don't have to worry about the grinding/tamping. I do have to adjust the time for the pulls though. Took me a while to get it right.

Yeah. I see that you're is an "automatic" one... :D I guess I'm just doing the easy thing and going by volume.

My grinder has a wide range of grades to choose from (and amounts of "cups") and I have to do the tamping myself. So I guess in that respect I'm running on full manual without having the luxury of a histogram! And since I don't have a developed "taste" for good coffee yet, I'm running a bit on the blind side.

you'll eventually figure out what you like & how you like it...and believe it or not, it'll change every now and then, as well :)
