What is the name of the boom that assistant is holding at the beginning of the video that can attach to the strobe? Anyone know?

Probably not the same, but Kacey Enterprises sells an adapter to turn a painters pole into a hand held boom.

It looks like a Light stand with legs folded that he is holding

You're doing it wrong then as the boom comes off mine quite easily. I even had to put it on when I bought it:confused:

I agree! You can clearly see the folded legs of the light stand at 5:29 into the video.
