I set the 580EX II flash to custom function 05-02 to use external metering for my 40D. How do I cancel that to go back to E-TTL? I have tried everything and must be overlooking something. Help please

Changing C.Fn 05 to 0 should set it back to E-TTL mode. What mode does your flash go to when C.Fn 05 is set to 0? Have you tried changing the flash setting via the camera external flash menu?

Yes, Try putting it on your 40D and use the in-camera flash menu.
