1D MARKIII Picture settings

Does anyone have any good tips for setting up an optimal picture setting using the 1D mark III, flash shots, jpeg fine/large, for headshots taken at convention?
Should I stick with Standard, Neutral, Portrait...? Adjust the saturation, contrast, sharpening, etc...?

I would shoot RAW but I need as much card space vs shots taken as I can get.
