I have been known to consume cherry lambics from a certain South Beach, FL English pub (The Abbey)

I think 2 weeks in the primary, 1-2 weeks in secondary then into bottles for a week or something. Don't recall. I'm not much of a beer person, but it was fun and a pain to make. I'll do it again when it's cooler out. Did heat up my apt quickly when doing all the boiling.

You should! It really doesn't take all that long, you have a brew day and then you ferment depending on your gravity (Depending on the brew I let the beer ferment 2-4 weeks)

Forgive the IQ ... hotlinked from Facebook.

The Allagash Curieux was paired with roasted pork. The Ommegang Chocolate was paired with a coconut custard w/ chocolate and almond paste. Both fantastic beers. I've always had a sneaking suspicious that Allagash could do no wrong, and the Curieux pretty much confirmed it.
